Dining in Guilin

The local delicacy is Guilin rice noodle (Guilin Mifen) has been the local breakfast staple since the Qin dynasty and is renowned for its delicate taste. Legend has it that when Qin troops suffering from diarrhea entered this region, a cook created the Guilin rice noodles for the army because they had trouble eating the local food. Specifically, the local specialty is noodles with horse meat, but this dish can also be ordered without the horse meat, and also available as stir-fried (Chao Fen).
 
Yangshuo Beer Fish (Yangshuo Pijiu yu) is one of famous local dish, while in Yangshuo, you have to try this famous beer fish?it is the fish from Li river cooked with local beer. With the fresh taste that the Li River fish contains, the fish is cooked in beer with some local vegetables, such as tomatoes and ginger. The fish can contain bones but the meat tastes really delicious.
 
Oil-tea (You Cha), the most famous Oil-tea is called Gongcheng oil-tea which is from Gongcheng, a county close to Guilin city. Oil-tea is the flavor of Guilin. Every county of Guilin has the habit of drinking oil-tea. With the taste of Chinese medicine and some local snack, this tea is a bit bitter, but the taste is good and what's more, it is good for your health.
 
Guilin cuisine is known for its snacks and the use of spices, especially chili. The famous Guilin chili sauce (Guilin Liajiaojiang), used widely in cooking by locals, is made of fresh chili, garlic and fermented soya beans. The other two of the Three Treasures are Guilin Sanhua Jiu, a kind of famous Chinese alcohol, liquor distilled from rice; and Guilin pickled tofu.
 
Zongzi, a dumpling made from glutinous rice and bean paste wrapped by bamboo leaves is another popular delicacy in Guilin.
 
A local snack is "Horse hoof cake" (Ma Ti Gao), which is a crumbly cake stuffed with red beans filling. Another delicious breakfast item is sweet tofu infused with a certain flower. Look for roadside vendors adding orange-colored liquid to a steaming hot bag of tofu, which you then drink with a straw.
